In a word, brilliant. This book starts with the history of sushi and continues through types of sushi and thier Japanese names. It continues to describe all the ingredients and their properties, then describes the tools required and then onto obtaining the ingredients. There is a section on how to prepare and fillet fish which has taught me some new ways to fillet. The book describes decorative techniques and is a great way to be confident in creating great looking and tasty sushi. The book is a great size and highly recommended.

Not only does it feature attractive photography but the instructions are seriously step-by-step designed for the terrified, including fish preparation and everything necessary down to the last detail.

Having worked in London's Square Mile for a year, I had sushi for a lot of lunches! Having bought this book, I now realise how over-priced sushi is! Stay home and make your own instead - not only is it fun, it tastes better too! This book is easy to follow with clear pictures. Give it a go.
