MONTENEGRIN CUISINE - colourful culinary mosaic

Traditional dishes in Montenegro are the result of both the country's geographic position and its interesting history. Montenegro's natural resources and location on the Adriatic has done more than just attract visitors to explore the varied landscape. It has also produced bountiful supplies of fresh fish, meat, vegetables and other tantalizing produce, which, cooked using a mixture of traditional methods has put Montenegrin cuisine on the culinary map.The cuisine in the coastal area differs from the one in the northern highland region. The coastal area is traditionally a representative of Mediterranean cuisine, with seafood being a common dish, while in the continental and northern region, one can savor delicious meat delicacies.

Find out what makes Montenegro a perfect combination of the Mediterranean, Latin, Muslim and Balkan cuisine. How, throughout history, numerous pretenders to these regions left marks not only in architecture, culture, art and mentality but in philosophy of food as well. Why we believe that the olives can cure just about anything and why the recipe for a long and healthy life is a glass of red wine a day? Why we say "˜health comes through mouth'? Why families used to leave their doors open during meal time? Or even how we didn't allow George Bernard Shaw to go about exploring our country on an empty stomach, and how he found poetic beauty in our even most simple dishes.

SOME TRADITIONAL DISHES

Although Montenegrin specialities vary according to region there are some key traditional dishes to try, perhaps one of the better-known being, Kacamak. Kacamak is a weighty dish consisting of mashed potatoes, wheat and corn flour, served with cheese and milk, and is a popular dish among Montenegrins. It is seen as a great source of energy and the perfect sustenance for a long day exploring the country.

Aside from its key traditional dishes, Montenegro is also famous for its prosciutto, known locally as Njeguški pršut and its cheese, Njeguški sir. Both of these products come from the village of Njeguški, which is known as the birthplace of the Montenegro's Royal dynasty. This prosciutto has a dry consistency and is a rich red in colour.

Lamb prepared under an iron pan – when we are talking about the meals made under the iron pan it would be interesting to mention the very process of preparing. The meals made under the iron pan are by far more tasteful than all other meals because they are put under an iron pan the so-called "sac", which is then covered by ember, live coal and ashes. In this way, the aroma is being kept, and the meal is equally fried in a natural way. Lamb, for e.g. is most tasteful if it is prepared in this way. Montenegrin national restaurants prepare it in this way even today.

When it comes to sweet delights, one of Montenegro's better known dishes is 'priganice'. These small airy doughnuts are prepared with flour, water, oil, salt and sugar and are traditionally served with honey, but "˜priganice' can also be enjoyed as savory dish.
