holiday fame, the beauty of the northern Basque region or
the wonders of cities like Madrid and Barcleona. The image
of the mythical Don Quixote tilting at his windmills . . .
Whatever
image thoughts of Spain conjures up, it is a wonderfully exciting
country to visit and take the time to get to know the real
Spain. Rich in history and rich in cultural influences, such
as Phoenicians, Greeks, Carthaginian, Roman and Moors, Spanish
cuisine features many very different kinds of dishes as a
result of the differences in geography, culture and climate
. . . and do not forget that it was the Spanish who brought
potatoes, tomatoes, peppers and beans from the New World.
Each
region of Spain has something different to offer the traveler
and enthusiastic cook. Each region has its own dishes but
common to most of Spain are Tapas, Tortillas, Cocido, Sopa
de Ajo, Gazpacho . . . if you have never been then you are
missing out.
