Strawberry Cake with Elderberry and Lemon Balm

Pie crust:
100 g (3 1/2 oz) butter or margarine
3 dl (1 1/2 cup) all-purpose white flour
150 g (good 5 oz) almond paste
1 tbs water

3 egg yolks
1 dl (1/2 cup) sugar
1/2 - 1 dl (1/4 - 1/2 cup) concentrated elderberry drink
grated peel from 1 orange

1 liter (good 1 quart) strawberries
lemon balm leaves


Pie crust:

  • Chop together fat, flour, and almond paste in a food processor or with a knife. Add water and quickly work to a dough.
  • Put in a cold place for about 20 minutes.
  • Press it out in a pie dish with removable edges, approx 23 cm / good 9" in diameter.
  • Pre-bake the crust at 200C/400F for 15 minutes and then lower the heat to 175C/350F.


  • Beat the egg yolks and sugar until fluffy.
  • Add the elderberry drink and the grated orange peel.
  • Pour the filling into the pie crust.
  • Bake for 15 - 20 minutes until tinged with brown.
  • Decorate with strawberries and lemon balm leaves and serve with lightly whipped cream. Enjoy!
