Recipe for :

Cajun Style Meatloaf

Seasoning Mix:
2 tsp. dried mustard
2 tsp. paprika
1 1/2 tsp. salt
1 1/2 tsp. dried thyme
1 1/2 tsp. basil
1 tsp. black pepper
1 tsp. garlic powder
1 tsp. onion powder

8 slices bacon diced
2 lbs. ground beef
1 1/2 cups chopped onions
1 cup finely chopped celery
1 cup V-8 juice (a spiced up tomato juice -you can spice tomato juice up with hot sauce, garlic, Worcestershire, celery salt and pepper)
1/2 cup evaporated milk
1/2 cup unsalted cracker crumbs
4 bay leaves
2 eggs, beaten
Pam spray
(spay oil)

  • Put all of the seasoning mix into the beef and pork. Mix well with your hands.
  • Cook vegetables with the bacon until crispy and browned well.
  • Remove the bay leaves and let cool.
  • Add the eggs, milk, crumbs and cooled vegetable mix. Mix again well with your hands and make a loaf.
  • Bake for 45 minutes. Do not over cook.
