Banana Soufflé

3 tbs butter or margarine
3 tbs all-purpose white flour
1 1/2 dl (3/4 cup) milk
4 egg yolks
5 egg whites
4 tbs sugar
grated peel from 1 lemon
1 1/2 banana

  • Melt the fat in a saucepan. Sprinkle with flour and sizzle for a minute.
  • Beat in the milk and let boil on a low heat for a few minutes.
  • Beat the 5 egg whites stiff and beat egg yolks, sugar, and lemon peel thick and fluffy. Mix in the egg yolk batter in the saucepan and then fold in the egg whites.
  • Peel and slice the bananas and mix them in.
  • Pour the batter in a greased soufflé dish or other oven-proof dish.
  • Bake in the lower part of the oven at 175ºC / 350ºF for 30 - 35 minutes or until it is set and has risen properly.
  • Serve immediately. Enjoy!
