Bill
says: "Although Fish and Chips is not very common
in the US, except in a few fast food places, beer batter
fish is a traditional meal offered by fishing guides
to their clients in Northern Minnesota. Here is A Minnesota
Shore Lunch standard served by Tom Collins of Walker,
Minnesota".
Ingredients
2
eggs, whole beaten
12 oz beer
12 oz flour
1/4 tsp salt
1/4 tsp pepper
1/2 tsp baking powder
Fish fillets
Cornstarch (for dredging)
Method
- Add
dry ingredients all at once. Mix smooth and adjust
consistency as required. Moisture content of flour
may vary so if the batter is heavy, adjust with a
small amount of milk. If the batter is too thin, adjust
with cornstarch, but never over mix
- Dredge
fish lightly in cornstarch, shake off excess, dip
fish in batter and immerse into deep fat. Fry at about
375ºF.
-
It is done when the batter puffs up and they are a
golden brown.
