Francena said, "This is another recipe that I have created. The ingredients are exactly the same as lasagne but I make a crepe instead of using noodles so it is not as filling as lasagne".

Ingredients

Meat or Meatless sauce (see separate recipes)

Crepes:
6 lightly beaten eggs
1 1/2 cups flour
1 1/2 cups water

Grated Mozzarella

Cheese mixture:
1 lb Ricotta cheese
1 egg
1 tbsp chopped parsley
Pinch of salt and pepper
1 tbsp grated Parmesan

Method

Mix ingredients for crepes together and leave stand for 1/2 hour

Spoon a layer of sauce into a 13 x 9 x 2 casserole dish

Crepes:

  • Lightly oil a small skillet
  • Pour enough batter to cover bottom of skillet thinly
  • Cook until top of batter is dry and slide out of skillet

Assembly:

  • Put the crepe into the casserole dish
  • Fill with 2 tbsps sauce, 2 tbsps grated Mozzarella, 2 tbsps of Ricotta cheese mixture
  • Fold crepe burrito style
  • Top crepes with remaining sauce
  • Sprinkle with grated Parmesan

Bake at 350º until bubbly or until cheese melts - about 1/2 hour.

Note:
Manicotti filling can be used to stuff large shells.

Serves 4 - 6
