Chicken Casserole

3 cups cooked chicken (cut in cubes)
2 cups minced celery
1/4-1/2 cup diced green onions
1 can water chestnuts (sliced)
1/2 cup slivered almonds
1 cup mayonnaise
2 cups cooked rice
1 can cream of mushroom soup, undiluted
1 can cream of chicken soup, undiluted
2 tsp. lemon juice
Ground pepper
1 small bag potato chips, crushed - save until last 1/2 hour

  • Mix all together in a 9 x 13 casserole dish.
  • Put in the refrigerator overnight.
  • Bake in a 350º oven for 1/2 hour.
  • After 1/2 hour, remove and cover with the crushed potato chips.
  • Continue baking for the last 1/2 hour.
