Steamed Syrup Pudding

75g / 3oz Butter
75g / 3oz Caster Sugar
2 Eggs
100g / 4oz Self-Raising Flour
A little Milk
2 tbsp Golden Syrup

  • In a bowl, cream together the butter and sugar until soft and pale. Gradually add the eggs and mix well then add the flour. Beat thoroughly with a wooden spoon, adding enough milk to form a mixture which drops from the spoon when lightly tapped.

  • Grease a 900ml / 1 1/2 pt pudding basin and pour the golden syrup into the bottom. Add the pudding mixture, cover with greaseproof paper, secure with string and place in a steamer or a large saucepan with enough boiling water to come to within 5cm / 2 inches on the top of the basin.
  • Cook steadily for 1 hour 30 minutes keeping an eye on the water level and topping up as necessary.

Serve hot with Golden Syrup Sauce (see Sauces - sweet at Recipes4us).
