Molasses Bread

1/2 cup melted butter
2 eggs
1/4 cup dark molasses
1/4 cup sugar
1 tsp. vanilla extract
2 cups unbleached flour
1/4 tsp. salt
1/2 tsp. baking soda
2 tsp. baking powder
1 cup buttermilk


Preheat oven to 350º. Butter a 9 x 5 x 3 inch loaf pan, dust lightly with flour and set aside.

In a large bowl, combine the butter, eggs, molasses, sugar and vanilla. Beat until well blended.

In another bowl. Sift together the flour, salt, baking soda and baking powder. Stir in about 1/3 of the flour at a time to the molasses mixture, alternating with 1/3 of the buttermilk. Stir after each addition, beginning and ending with the flour. Mix the batter until well blended.

Pour the batter into the prepared pan. Set the pan on the lower shelf of the hot oven and bake for 1 hour or until the bread is golden brown and puffy and a knife inserted in the center comes out clean.

Remove the pan from the oven and cool on a wire rack for 10 minutes and then turn out the bread onto the rack and cool completely.

Makes 1 loaf
