Betty's Orange-Pecan-Red Onion Salad

"We had this at some friends' home and they graciously shared the recipe. It's from their mother in New Foundland, Canada".


1/4 cup vinegar
1/2 or less cup sugar
1 cup vegetable oil
1 teaspoon salt
1 teaspoon dried mustard
2 tablespoons water
1 bunch romaine lettuce
3/4 - 1 cup pecans, chopped
1 can mandarin oranges, drained well
1 red onion

  • Blend 1/2 of the onion in food processor until VERY fine.
  • Put into a bowl and add the first 6 ingredients; mix well.
  • Tear, rinse and dry lettuce.
  • Thinly slice the rest of the red onion.
  • Keep lettuce, onion and dressing in refrigerator.
  • Mix all ingredients before serving adding dressing last.
  • Toss well.
