Maple Chicken

4 boneless chicken breasts
1/3 cup flour
1/4 cup vegetable oil or vegetable spray
2 tablespoons soy sauce
2 teaspoons ginger
2 cloves garlic, minced
1/2 cup maple syrup
1/2 teaspoon pepper
2 tablespoons vinegar
1/4 teaspoon paprika
2 tablespoons sherry or other wine
About 1 tablespoon cornstarch to thicken slightly

  • Preheat oven to 350º.
  • Coat chicken breasts with flour, and brown in pan with vegetable oil or spray for about 5 minutes.
  • Arrange in 9 inch square pan.
  • Whisk balance of ingredients in small bowl.
  • Pour over chicken.
  • Cover and bake for 25 minutes.
  • Uncover and bake another 20 to 35 minutes, until it is no longer pink and juices run clear.
