says: "Here is another variation of Solo
Chicken dishes. Remember that cooking is a creative
sport, so feel free to adjust the spices and use
different colors of bell peppers. A bit of chopped
Mango might also be nice".
large (4 - 6 Ounce) skinless, boneless Chicken
1/2 cup of a Bell Green Pepper, stem and seeds
1/2 cup of Yellow Onion cut into one inch squares
1/2 cup Pineapple chuncks ...Canned is alright
2 tablespoons of olive oil ( small pat of butter
may be added )
1 teaspoon of curry powder
1/3 cup of uncooked rice ... not instant.
1/3 cup of chicken stock
1/3 cup of Pineapple juice
sauté the onion in the olive oil until
limp, add the curry powder and raw rice.
until all the rice gains are coated with the
oil, add the chicken pineapple and the peppers.
the stock and juice and cover with a tight fitting
over very low heat for 15 minutes, then remove
from the heat leave covered and let sit for
additional 10 minutes.
