Solo Tropical Chicken Breasts

Bill says: "Here is another variation of Solo Chicken dishes. Remember that cooking is a creative sport, so feel free to adjust the spices and use different colors of bell peppers. A bit of chopped Mango might also be nice".


1 large (4 - 6 Ounce) skinless, boneless Chicken Breast
1/2 cup of a Bell Green Pepper, stem and seeds removed
1/2 cup of Yellow Onion cut into one inch squares
1/2 cup Pineapple chuncks ...Canned is alright for this.
2 tablespoons of olive oil ( small pat of butter may be added )
1 teaspoon of curry powder
1/3 cup of uncooked rice ... not instant.
1/3 cup of chicken stock
1/3 cup of Pineapple juice


  • First sauté the onion in the olive oil until limp, add the curry powder and raw rice.
  • Stir until all the rice gains are coated with the oil, add the chicken pineapple and the peppers.
  • Add the stock and juice and cover with a tight fitting lid.
  • Cook over very low heat for 15 minutes, then remove from the heat leave covered and let sit for additional 10 minutes.
