Family Favorite Meat Loaf

2 pounds extra lean ground beef
1 small onion, finely chopped
1 small bell pepper, finely chopped
1 celery rib, finely chopped
1 large carrot, finely shredded
2 garlic cloves, finely minced
1 cup quick-cooking oats
1 tablespoon Worcestershire sauce
1 teaspoon horseradish
1 teaspoon dry mustard
1/2 teaspoon Tabasco sauce
1 1/4 teaspoons salt
Freshly ground pepper to taste
1/2 cup milk
1 egg
1/4 cup ketchup

Piquant Topping:
1/2 cup ketchup
2 tablespoons brown sugar, packed
1 tablespoon Worcestershire sauce
2 teaspoons lemon juice or vinegar
1/2 teaspoon horseradish

  • Preheat oven to 350ºF (175ºC). Prepare a large baking sheet with sides by lining it with foil. Set aside. If you have a food processor, use it to prepare the vegetables.
  • In large mixing bowl combine all the ingredients, except for topping, mixing thoroughly with your hands. (Just part of the meatloaf-experience!)
  • Place meat mixture onto baking sheet and shape into a loaf. Bake for 45 minutes. Remove from oven; drain excess grease. Spoon topping over meatloaf. Return to oven and bake an additional 15 to 20 minutes. Remove from oven and allow to set for 10 minutes before slicing.

Piquant Topping:

  • Mix together in small bowl and follow directions above.
