Recipe for family meals :

Honey Dijon Glazed Salmon

This recipe comes from Steph's website, Country Kitchen Goodness. Steph and her husband Don live in Idaho as Don, who is in the Forces, is stationed there. One of Steph's great loves in life is cooking hence her website which is well worth a visit - click here.

In the introduction to her website Steph had this to say:

"Nothing quite compares to the satisfying feeling of preparing your family a delicious meal they all enjoy. My passion for cooking surfaced when I began experimenting and reading cookbooks as an adult. I am trying to instill this joy in my children so they will hopefully appreciate the art growing up. Cooking is one of my favorite forms of creative expression".

"I am a big salmon and honey mustard lover, so this recipe is ideal. The sweet glaze compliments the moist salmon especially well. Make extra sauce if you want lots of glaze on your salmon".

Ingredients

1 pound salmon filets
1/4 cup honey
1/4 cup Dijon mustard
1/4 tsp. cracked black pepper

Method
  • Heat grill or coals to medium heat.
  • While grill heats, whisk together honey, Dijon mustard and pepper until smooth.
  • Place salmon fillets top side down on well greased grill rack.
  • Grill for 5 minutes.
  • Turn salmon over and grill until almost done, about 10 minutes.
  • Brush glaze over salmon fillets
  • Cover grill and grill another 1 - 2 minutes until fish is done.
  • Spoon any remaining glaze over salmon just before serving.

Serves 4
