Recipe for family meals :

Beef Jerky

This recipe comes from Steph's website, Country Kitchen Goodness. Steph and her husband Don live in Idaho as Don, who is in the Forces, is stationed there. One of Steph's great loves in life is cooking..

In the introduction to her website Steph had this to say:

"Nothing quite compares to the satisfying feeling of preparing your family a delicious meal they all enjoy. My passion for cooking surfaced when I began experimenting and reading cookbooks as an adult. I am trying to instill this joy in my children so they will hopefully appreciate the art growing up. Cooking is one of my favorite forms of creative expression".

"Just as popular as Dons meatballs, this beef jerky is another of his delicoius creations our family loves. Now, if I could just get him to do the dishes, I would be set ! ".

1-1/2 pounds beef flank steak
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1-1/2 tsp. garlic powder
1-1/2 tsp. pepper
1 tsp. liquid smoke
1 tsp.onion powder
1 tsp. Accent flavor enhancer

  • Trim all fat from the steak and slice 1/8-inch thick.
  • Combine remaining ingredients in a shallow dish or large, sealable, plastic bag.
  • Toss beef to coat. Marinade in refrigerator 12 hours, turning a few times.
  • Remove beef and discard marinade.
  • Lay beef on paper towles and pat dry.
  • Sprinkle coarse ground pepper over meat.
  • Place aluminum foil on bottom of oven to catch drips.
  • Lay beef strips directly on oven racks and cook on lowest oven temperature, approximately 125º, for 8 to 10 hours or until done.
  • Sometimes it seems to take longer than others, depends on how thin beef is sliced.

Yes, this is a day long process, but most of the time you're not fussing with it, it's doing it's own thing. It's very easy to make, and even easier to eat.
