Everyone deserves
a well-earned break now and then and if youre the type of person
who would like to combine a trip abroad with a delicious cooking experience,
this is the prize for you!
"This
is a simple, uncomplicated cake which was common
to bake in Swedish homes for birthdays. Of course,
the cream and fruit cake tops the list and has
done so for many decades, but this one is delicious
in all its simplicity! It's best with home-made
applesauce which is very easy to make".
Heat
the oven to 200ºC / 400ºF. Grease
and flour a round baking dish, diameter approx
24 cm / 9" - 10".
Beat
eggs and sugar white and fluffy. Mix flour
and baking powder well together. Stir in the
water in the egg batter and then add the flour
mixture. Pour in the dish and bake for about
30 minutes.
Meanwhile,
make the applesauce. Peel and core the apples
and cut them in smaller pieces. Boil them
with the water in a small saucepan, covered,
for 10 - 15 minutes. Add sugar and mash the
fruit with a fork or in a mixer.
Mix
all ingredients for the chocolate fudge sauce,
except for the flaked almonds, and bring to
a boil while stirring. Allow to cool.
Split
the cake in 2 layers. Spread approx 3 dl (1
1/4 cups) applesauce between the layers, put
the layers together and pour the sauce over
the cake. Sprinkle with flaked almonds.
