Essence of Summer Cake

"This cake is made with fresh or frozen blackcurrants, but you can also use other fresh or frozen berries like blackberries, blueberries or raspberries - or why not a mix? We make this cake several times each summer when there's plenty of berries".


150 g (5 oz) butter or margarine
1 1/2 dl (2/3 cup) sugar
1/2 tsp vanilla sugar
1 egg
4 dl (1 3/4 cups) flour
1 tsp baking powder
approx 6 dl (2 1/2 cups) blackcurrants
or other fresh or frozen berries (see above),
approx 400 g (14 oz)
3 - 4 tbs sugar

  • Heat the oven to 175ºC / 350ºF.
  • Stir butter or margarine, sugar and vanilla sugar fluffy.
  • Stir in the egg so that it is well blended and then flour mixed with baking powder.
  • Spread out the batter in a baking dish, capacity 1 1/2 liters / 6 cups, preferably with loose edges.
  • Press up the batter against the walls, so that there is a bowl-shaped hollow in the middle.
  • Put the berries in this hollow and sprinkle with sugar (unless the berries are already sweetened).
  • Bake for approx 45 minutes on the lowest shelf of the oven.
  • Serve cooled with whipped cream.
