Spicy Scrambled Eggs

This is one of the recipes that has been provided by Vandana who is very much a keen cook of Indian dishes. Hopefully there will be more to come!


4 eggs
1/2 tsp turmeric powder
2 medium onions finely chopped
1 large tomato chopped finely
2 green chilies finely chopped
2 tbs cilantro leaves finely chopped
2 tbs groundnut/corn oil
pepper and salt to taste

  • Heat oil in a frying pan and sauté onions till transparent.
  • Add tomatoes, turmeric and chilies and cook for 2 minutes until tomatoes wilt.
  • Stir in beaten eggs and seasoning and cook till the eggs are just cooked and soft.
  • Garnish with cilantro leaves and serve with buttered toast.
