This is what Becky said about this recipe:
not be Halloween at our home without 'Dinner In
A Pumpkin'. The first time I made it, it was so
cute to see everyone keep peeking in the oven
to check on the baking pumpkin".
medium pumpkin, about 4 pounds
1 1/2 pounds ground beef
1/3 cup green pepper, chopped
3/4 cup celery, chopped
3/4 cup onion, chopped
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons soy sauce
2 tablespoons brown sugar
1 (4 ounce) can mushrooms
1 can cream of chicken soup
2 cups cooked rice
ground beef; add peppers, celery and onion and
cook until soft.
next 7 ingredients. Mix well and put in pumpkin.
top on pumpkin. Place on foil lined cookie sheet
and bake for 1 1/2 hours.
serve scoop out pumpkin along with meat mixture.
toothpicks to attach black olives for eyes,
carrots for nose, press in whole cloves for
mouth and fresh parsley for hair around opening.
