Leche Flan

"My Filipina friend gave me this recipe years ago. It's really delicious".


12 egg yolks
1 can sweetened condensed milk diluted with an equal amount of water
1 tsp. vanilla
1 tsp. lemon juice
1 cup brown sugar
1/4 cup water

  • Caramelize the brown sugar by boiling it in 1/4 cup of water stirring once in a while until sugar is melted.
  • Allow to thicken into a syrup, then pour into flan mold or muffin cups making sure that the whole inside surface is covered. Set aside.
  • Combine egg yolks, condensed milk, water, vanilla, and lemon juice in a big bowl using a wooden spoon.
  • Stir slowly and pour into flan mold.
  • Preheat oven to 325º.
  • Cover flan mold with foil and set it in a pan filled half way up with water.
  • Bake for 1 hour or until flan is firm.
  • Let cool before unmolding into a platter.
