Kiwi Walnut Bread

Ingredients

2 C. sifted all-purpose flour
1 C. granulated sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 C. canned or cooked kiwi, drained and chopped
3/4 C. chopped walnuts
1 egg, beaten
1 C. butter or margarine, melted
1 tsp. vanilla extract

Method
  • Sift flour with sugar, baking powder, baking soda and salt into large bowl.
  • Add kiwi and nuts and mix well.
  • Add egg, butter and vanilla extract.
  • Stir until just blended.
  • Turn into greased and floured 9 x 5 x 3-inch loaf pan.
  • Bake at 350ºF for 1 hour or until done.
  • Cool in pan for 5 minutes, then turn out on rack to complete cooling.

Serve in thin slices spread with softened cream cheese. Strawberry cream cheese is a good choice.
