large or 6 medium sized Louisiana yams (or sweet
1/3 cup Curacao
6 Tblsp. salted butter
1/4 cup bourbon
1/2 cup sugar
1 tsp. cinnamon
1/4 tsp. freshly grated nutmeg (or canned)
1/8 tsp. cloves
1/2 tsp. salt
1/8 tsp. freshly ground white pepper
the yams and scrub them well. Dry thoroughly.
Rub the skins with a bit of vegetable oil, then
place the yams in a shallow baking dish and
bake in a preheated 450º oven for 30 minutes.
Allow to cool slightly, then peel and cut into
3/4 inch slices. In a small saucepan, melt 4
Tblsp. of the butter over low heat, then add
the remaining ingredients and mix thoroughly.
Remove the pan from the heat.
a 3 - 4 quart casserole and put the yam slices
in it in 3 layers, pouring 1/3 of the seasoned
butter sauce over each layer. Bake covered in
a preheated 350º oven for 20 minutes, then
remove the casserole form the oven and uncover.
a large wooden spoon, stir up the contents,
cutting the yam slices in half and bringing
the bottom layers to the top.
it is thoroughly mixed, press the mixture down
firmly with the back of the spoon. Smooth and
flatten the top surface and dot it evenly with
the remaining 2 Tblsp. of butter, cut into small
pieces. Return to the 350º oven and bake
uncovered for 20 minutes longer.
