on rare occasions I have an hour or two to spare,
I like nothing more than to spend my time looking
through the piles of old cookery books in charity
shops. A lot of the time you see the same old
versions of Marks & Spencer or Sainsbury (UK
supermarkets) cookery books or books by those
more obscure 'amateur' or professional chefs who
never really hit the limelight but from time to
time you will find the odd book which is a bit
different or contains more interesting recipes
is one such recipe.
large eggs - hard boiled
4 - 6 ozs shrimps and prawns - shelled and coarsely
1/2 pt thick mayonnaise
Watercress to garnish
eggs and peel. Split them in half lengthways,
scoop out yolks and carefully push half of them
through a sieve into a basin.
the shrimps or prawns. Mix and bind with 1 -
2 tablespoons mayonnaise.
egg whites, dry and set on a serving dish. Fill
with the prawn mixture.
the rest of the mayonnaise slightly with 1 tablespoon
hot water and coat the eggs with this.
sieve over eggs and push rest of yolks through.
dish with watercress.
with thin slices of brown bread and butter.
