Pineapple Salsa

Ingredients

2 C. chopped extra sweet pineapple (preferably fresh)
1 C. chopped red and/or green bell pepper
1/2 C. Vidalia sweet onion slivers
3 T. white wine vinegar
3 T. chopped cilantro
1 to 2 fresh jalapeño peppers, seeded and finely chopped

Method
  • Blend pineapple, bell pepper, onion, vinegar, cilantro and jalapeño pepper in medium bowl. Refrigerate, covered, for 4 to 24 hours, stirring occasionally.
  • Serve salsa over grilled seafood or chicken or with chips.
