Blazin' Hot Green Salsa

1/2 lb. tomatillos, about 8 small ones, papery husks removed
1 or 2 jalapeño peppers, to taste
2 cloves garlic, crushed
Juice of 1 lime (about 1/4 cup)
2 green onions (white and 3 inches of green), sliced
1/4 tsp. sugar
1/8 tsp. ground chipotle pepper
1 pinch of salt, or to taste

  • Wash off sticky residue on tomatillos with warm water, then skewer them. On another skewer, thread jalapeños lengthwise.
  • Grill tomatillos until their color slightly changes and their skins are about to split. Grill jalapeños until skin is charred, blistered and starting to peel away. Immediately place jalapeños in a plastic bag and seal; let sit for 10 minutes. Wearing gloves, peel off jalapeño skins, then halve lengthwise and remove seeds.
  • Purée jalapeños, tomatillos, garlic, lime juice, green onions, sugar, chipotle pepper and salt in food processor. Serve chilled.
