lb. tomatillos, about 8 small ones, papery husks
1 or 2 jalapeño peppers, to taste
2 cloves garlic, crushed
Juice of 1 lime (about 1/4 cup)
2 green onions (white and 3 inches of green),
1/4 tsp. sugar
1/8 tsp. ground chipotle pepper
1 pinch of salt, or to taste
off sticky residue on tomatillos with warm
water, then skewer them. On another skewer,
thread jalapeños lengthwise.

and their skins are about to split. Grill jalapeños
until skin is charred, blistered and starting
to peel away. Immediately place jalapeños
in a plastic bag and seal; let sit for 10 minutes.
Wearing gloves, peel off jalapeño skins,
then halve lengthwise and remove seeds.
