Ingredients

3 eggs
1 C. applesauce
1 1/2 C. granulated sugar
1/4 C. butter or margarine
2 tsp. vanilla extract
1 C. zucchini, grated
1 C. carrots, grated
1 1/2 C. raisins
1 C. pineapple, crushed and well drained
3 C. all-purpose flour
1 1/2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
1/4 tsp. salt

Method
  • Beat together eggs, applesauce, sugar, butter, and vanilla extract.
  • Stir in grated zucchini, carrots, raisins, and pineapple.
  • Mix together flour, baking powder, soda, nutmeg, cinnamon, and salt.
  • Stir flour mixture into egg / applesauce mixture just until dry ingredients are moist - do not over mix.
  • Spoon into 24 paper lined cupcake tins.
  • Bake at 350ºF for 25 - 35 minutes or until done.
