50g / 2oz Ground Almonds
50g / 2oz Caster Sugar
1/2 teasp Ground Cinnamon
Almond flakes to decorate
the oven to 180ºC, 350ºF, Gas Mark
4 and line some baking trays with rice paper.
a large mixing bowl, whisk the egg white until
in the ground almonds, sugar and cinnamon, blending
teaspoonfuls of the mixture onto the lined baking
trays, spacing well apart.
the top of each biscuit with 3 or 4 flaked almonds
then bake in the oven for 15 - 20 minutes until
golden, firm and crisp.
from the oven and cool on the trays. Once cold,
trim away the excess rice paper.
