Christmas Macaroons

This recipe is one of the recipes featured for Christmas but of course you can enjoy it all the year round.


1 Egg White
50g / 2oz Ground Almonds
50g / 2oz Caster Sugar
1/2 teasp Ground Cinnamon
Almond flakes to decorate


  • Preheat the oven to 180ºC, 350ºF, Gas Mark 4 and line some baking trays with rice paper.
  • In a large mixing bowl, whisk the egg white until stiff.
  • Fold in the ground almonds, sugar and cinnamon, blending well.
  • Drop teaspoonfuls of the mixture onto the lined baking trays, spacing well apart.
  • Decorate the top of each biscuit with 3 or 4 flaked almonds then bake in the oven for 15 - 20 minutes until golden, firm and crisp.
  • Remove from the oven and cool on the trays. Once cold, trim away the excess rice paper.
