Carrot and Orange Soup
 

This recipe comes from a cookery book my wife bought many years ago called 'Christmas Cooking' from a series called 'The Australian Way, Cook and Learn' from Dinkum Fare.

"This is another recipe that uses the humble carrot in a slightly more adventurous fashion than just boiling it as an accompaniment".

Ingredients

2 tbspns butter
4 medium carrots, sliced
1 onion, finely chopped
4 cups chicken stock
salt and pepper
3 tbspns orange juice
chives

Method
  • Melt butter in a saucepan. Add carrots and onion and cook for 10 minutes. Do not brown.
  • Stir in 2 cups of stock. Bring to boil, simmer for 15 minutes.
  • Purée in blender or processor, season to taste. Add remaining stock and orange juice.
  • Reheat soup, being careful not to boil. Garnish with snipped chives.

Serves 4
