Zaletti - Italian Christmas Cookies

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. You will be able to find out more about Martin when his Biography page is published.

Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


1 cup flour
1 cup cornmeal
1/2 cup sugar
1/8 teaspoon salt
1 teaspoon baking powder
8 tablespoons butter, softened
1 cup raisins
1 egg
1 egg yolk
1 teaspoon vanilla
1 teaspoon lemon zest

  • Preheat the oven to 350º.
  • Cream together the flour, cornmeal, sugar, salt, raisins, butter and baking powder. Mix until a dough forms.
  • In a separate bowl, mix together the egg, egg yolk, vanilla and zest. Add to the other mixture and blend well.
  • Divide the dough into 2 pieces. Roll into logs. Slice into 1/2-inch pieces. Place on a cookie sheet lined with parchment.
  • Bake until lightly browned (about 15 - 18 minutes).
