2 c. all-purpose flour
1 c. sugar
1-1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 t. grated orange peel
Juice from 1 orange
1-1/2 c. shredded Cheddar cheese (6 oz.)
1 egg, beaten
1 c. cranberries, cut in half
1/2 c. chopped pecans
loaf pan, 9 x 5 x 3 inches.
shortening into flour, sugar, baking powder,
baking soda, salt and orange peel with pastry
blender in large bowl.
enough water to orange juice to measure 1/4
cup. Stir juice mixture, cheese and egg into
flour mixture. Fold
in cranberries and pecans.
into pan and bake for 60 to 70 minutes or until
toothpick inserted in center comes out clean.
5 minutes. Loosen sides of loaf from pan, remove
from pan. Cool completely before slicing.
