Kiwi Cherry Bread

Ingredients

3/4 C. brown sugar, packed
1/2 C. soft shortening
2 eggs
1 C. cooked kiwi, drained and chopped
1/4 C. kiwi juice
1/2 C. green candied cherries, halved
2 1/2 C. sifted all-purpose flour
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Method
  • Beat together sugar, shortening and eggs until well blended.
  • Stir in kiwi, juice and cherries.
  • Sift dry ingredients and blend into kiwi mixture.
  • Turn into greased and floured 9 x 5 x 3 inch pan.
  • Bake at 350ºF for 1 hour or until done. Cool in pan 5 minutes, then turn out on rack to complete cooling.

Note:

Slicing is easier the second day.
