Seafood Chilli

This recipe is from Chesapeake Bay Cooking which specialises in shellfish and seafood recipes as well as the famous Maryland Stuffed Ham recipes.


1 pound medium shrimp peeled, deveined with tails removed
1 pound white fish, skinned & boneless
1/2 pound bay scallops
1 tablespoon vegetable oil
2 cloves garlic, chopped
1/2 cup celery, diced
1/2 cup red onion, diced
3/4 cup red pepper, diced
2 - 14½ oz. cans diced tomatoes
1 small can ( 8 ounce ) tomato paste
1 can dark kidney beans
1 1/2 tablespoon chili powder
1/2 teaspoon ground coriander
2 bay leaves whole
1/2 teaspoon cayenne pepper
1 teaspoon sugar
2 teaspoons salt
1 teaspoon black pepper

  • Heat oil in a large saucepan; add onions, garlic, celery and seafood. Sautéing until almost cooked.
  • Empty tomato wedges in a bowl, then add to the seafood mixture. Reduce heat to medium low and add peppers, beans, tomato paste, and spices.
  • Stir together making sure that the seafood is not stuck to the bottom. Heat until bubbling, reduce heat, cover and let cook for 30 minutes.
