Recipe for family meals :

Chocolate Oreo Bars

This recipe comes from the the Bitchin Kitchen web site which is run by Faith Heinauer. This is what she said in describing Bitchin Kitchen:

" I grew up in a household that loved not only food, but also the creative process of cooking and entertaining. My father is a professional chef and my mother was a former pastry chef. After earning my degree in hotel and restaurant management, I joined my father's catering business and started teaching cooking classes. Growing up in the restaurant scene offers a lot of culinary observations; add my knack for experimenting in the kitchen, and you've got my collection of recipes and tricks of the trade. So, if you want to talk food, get a great recipe or hear the latest culinary scoop, you're at the right place!"

"C’mon, get happy!

Loads of chocolate and Oreos? Pinch me, I’m dreaming!

For all the chocoholics in the house, this one’s for you. Chocolate boosts the bodies’ level of seratonin, which releases a sense of well-being. These badass bars are chocolate, Oreo and sugar goodness . . . which means happy times for all who eat them! What are you waiting for? Go on, get happy".

Ingredients

Bottom layer:
1 cup crushed Oreos
3 Tablespoons granulated sugar
4 Tablespoons butter, melted

Middle layer:
4 Tablespoons (1/4 cup) butter, melted
1/4 cup milk chocolate chips, melted
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1/2 cup all purpose flour
4 Tablespoons (1/4 cup) butter, melted
1 cup crushed Oreos

Top layer:
2 cups miniature marshmallows
1 cup milk chocolate chips
1/4  cup pecans, chopped & toasted (optional)

Method
  • Preheat oven to 350°.
  • Lightly grease and flour an 8 x 8 inch square pan.
  • Mix together the bottom layer ingredients. Press ingredients into pan.
  • For the middle layer: Combine 1/4 cup melted butter, melted chocolate chips, sugar, eggs vanilla and flour. Once thoroughly mixed, pour over bottom layer.
  • Combine the remaining 1/4 cup melted butter and Oreos. Mix together and evenly sprinkle over middle layer.
  • Bake for 30 minutes, do not worry if toothpick inserted in center doesn’t come out clean - it needs the fudgy texture.
  • Sprinkle the middle layers with marshmallows. Place in oven until marshmallows brown, about 30 – 50 seconds.
  • Remove and sprinkle with chocolate chips.

Cool, cut and chow!
