Apple Swirl Buns

1 3/4 oz fresh yeast
3 1/2 oz butter or margarine
1 1/4 dl milk
1/2 cup sugar
1/4 tsp salt
1 egg
1 qt all-purpose white flour

5 - 6 apples, approx 1 1/2 lb
1/2 cup nut kernels
1 - 2 tbs corn starch
grated peel and juice from 1/2 - 1 lemon
sugar to taste

For brushing:

  • Crumble the yeast in a mixing bowl.
  • Melt the fat, add the milk, and warm the liquid to 37ºC / 98ºF. Pour over the yeast and stir until dissolved.
  • Mix in sugar, salt, and egg.
  • Work in most of the flour until the dough does not stick to the sides.
  • Sprinkle with a thin layer of flour, cover, and let rise until barely double, about 30 minutes.
  • Prepare the fillingby peeling and coarsely grating the apples or finely dice them then mix with chopped nuts, corn starch, and lemon. Flavor with sugar to taste.
  • Take up the dough onto a floured surface and knead in remaining flour. Divide the dough in two and roll out each part to a rectangular cake, 30 x 40 cm / 12 x 16".
  • Divide the filling on these rectangles and roll them up.
  • Cut each roll in 2 cm / 3/4" broad pieces and put in paper tins, which is best to use when baking buns with filling. Cover and let rise for about 30 minutes.
  • Brush with beaten egg and bake in the middle of the oven at 250ºC / 475ºF for 6 - 8 minutes. Allow to cool covered on a rack.
