Beef Stroganoff Sandwiches

2 lb. ground beef
1/2 C. chopped onion
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
1 loaf French bread
Butter or margarine, softened
2 C. (16 oz.) sour cream
2 tomatoes, seeded and diced
1 large green bell pepper, diced
3 C. (12 oz.) shredded cheddar cheese

  • In a skillet, brown ground beef and onion. Drain.
  • Stir in salt, garlic powder and pepper.
  • Cut bread lengthwise in half; butter both halves and place on cookie sheets.
  • Add sour cream to meat mixture; spoon onto bread halves.
  • Sprinkle with tomatoes and green pepper and top with cheese.
  • Bake at 350°F for 20 minutes or until cheese is melted (bake longer for crispier bread).

Makes 8 - 10 servings
