Macaroni and Ham Au Gratin

This recipe was printed in response to a request from a reader of James' newsletter:


1 lb Elbow Macaroni or shells
3 Tl Butter
3 T Flour
2 1/2 c Half & Half
1 ts Salt
1/2 ts White Pepper
3/4 lb Cheddar cheese; grated
1/4 ts Dry mustard
1 1/4 lb Ham; diced
1/2 c Bread crumbs; dry
1/4 c Parmesan cheese, grated

  • Cook Macaroni, rinse and hold aside.
  • Make roux with Butter and Flour, cook 5 minutes
  • Add half and half and seasoning to roux, heat.
  • Add Cheese to sauce, whip until smooth.
  • Mix enough water with Mustard to make a paste. Add to sauce
  • Combine Macaroni, sauce and diced ham. Put in casserole dish.
  • Mix Bread Crumbs and Parmesan cheese together. Sprinkle Crumbs and Paprika over top of Macaroni.
  • Bake in 350º oven for 30 minutes.
