Date Bars
 

This is one of the recipes that has been provided by Shirley Cline from San Fransisco in response to my quest for recipes using Balsamic Vinegar. (You can contact Shirley by emailing her - click here).

Ingredients

1/2 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 cups (8 oz.) cut up pitted dates
1 cup walnuts, coarsely chopped (or pecans)
2 eggs
1 cup dark brown sugar, firmly packed
1/4 cup vegetable oil
1 tsp. vanilla

Method
  • Mix flour, baking powder and salt.
  • Combine dates and nuts with the dry ingredients and set aside.
  • Beat eggs, add sugar and beat well. Mix in oil and vanilla.
  • Stir in flour-date mixture, mixing thoroughly.
  • Spread evenly in greased and floured 9 x 13 inch pan.
  • Bake in a 350º oven for 25 - 30 minutes.
  • When slightly cool, cut into bars.
