Marinated Chicken Drumsticks

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


1 tablespoon grated lemon rind
1/2 cup lemon juice
1/2 cup olive oil
1/2 cup brandy
1/2 cup white vinegar
3 cloves garlic, crushed
1/2 cup brown sugar, firmly packed
1/2 teaspoon ground cloves
1 tablespoon turmeric
1 teaspoon ground cumin
1 teaspoon garam masala
12 chicken drumsticks
2 tomatoes, sliced.

Basil Dressing:
1/2 cup olive oil
1 tablespoon white vinegar
2 tablespoons chopped fresh basil

  • Combine rind, juice, oil, brandy, vinegar, garlic, sugar ,cloves, turmeric, cumin and garam masala in large bowl, add chicken, cover, refrigerate several hours or overnight, turning ocassionally.
  • Drain chicken, discard marinade.
  • Place chicken on wire rack in baking dish.
  • Bake in moderately hot oven for about 30 minutes or until lightly browned and tender.
  • Serve drumsticks with sliced tomato and basil dressing.

Basil Dressing:

  • Combine all ingredients in bowl and mix well.
