Ingredients

6 - 8 eggs (beaten)
1 lb. Sharp Cheddar cheese or Swiss, shredded
1/4 cup drained, chopped pimentos or tomatoes
2 - 3 jalapeno peppers, seeded & chopped

• Mix all ingredients and pour into a 9" of 10" greased pie plate.

• Bake at 350º for 30 minutes or until firm.

• Cool before cutting.

• For a hotter pie, add more jalapeno peppers or hot salsa.
