Southwestern Dough Gods

Ingredients

1 tablespoon butter
1/2 cup chopped green bell pepper
2 cups sifted all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup vegetable oil
2/3 cup milk
1/2 cup fresh corn kernels
1 1/2 cups Cheddar cheese, shredded

Method
  • Preheat oven to 350ºF / 175ºC.
  • In a skillet or frying pan, melt butter over medium heat. Add bell pepper and sauté until tender. Remove from heat and set aside.
  • In a large mixing bowl, stir together flour, baking powder, salt, oil and milk. Dough should be slightly sticky.
  • Add sautéed peppers, corn and cheese.
  • Drop spoonfuls of batter onto lightly greased cookie sheets.
  • Bake for 10 to 12 minutes, until golden.
