Italian-Style Meatloaf

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.


1 pound Ground chuck
1/2 cup Italian-style breadcrumbs
1/2 cup Milk
1 Egg
1/4 teaspoon Fennel seed
1/2 teaspoon Basil
1/2 teaspoon Oregano
Salt and pepper to taste
1 small Onion, minced
1 teaspoon Garlic, minced
2 teaspoons Olive oil

  • Pre-heat the oven to 350º.
  • Mix together the chuck, breadcrumbs, milk, egg and spices.
  • Heat the oil in a skillet.
  • Add the onion and garlic. Cook until just soft.
  • Add to the meat mixture.
  • Put into a loaf pan and bake (on a cookie sheet) for 1 hour or until firm in the middle.
  • Top with the sauce (if used) after slicing.

Serves 4 to 6
