Minestrone
 

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

Ingredients

2 Tablespoons Olive oil
1 medium Onion, diced
2 stalk Celery, diced
2 Carrots, peeled and diced
1 teaspoon Garlic, minced
1 Tablespoon Basil
1/4 teaspoon Rosemary
2 cups Cabbage, chopped
2 cups Tomatoes, diced
4 cups Water
4 cups Chicken broth
1 1/2 cups Pinto beans, cooked (canned)
Salt and pepper to taste

Method
  • Heat the oil in a soup pot.
  • Add the onion, celery, carrots and garlic. Cook until soft.
  • Add the herbs, cabbage, tomatoes, water and broth. Slowly bring to a boil. Reduce the heat and simmer for 45 minutes.
  • Add the beans and simmer for 10 minutes longer.
  • Check the seasonings.

Serves 6 to 8
