Sweet Olive Oil Quick Bread

This recipe comes from Mangia Bene Pasta - what can I add after a title like that, except to say this site has some excellent recipes and information. Well worth visiting.

2 1/2 cups all-purpose flour
2 tsp baking powder
Pinch salt
1 cup sugar
2 eggs, lightly beaten
3/4 cup milk
1/2 cup olive oil
1/2 cup golden raisins
Grated zest of 1 lemon
1/4 cup coarsely chopped walnuts

  • Preheat oven to 350ºF
  • In a mixing bowl, stir together the flour, baking powder, salt and sugar. Add the eggs, milk, and olive oil. Beat well.
  • Add the raisins and lemon zest and stir to distribute evenly.
  • Butter a loaf pan. Pour the batter into the pan and sprinkle the top with the walnuts.
  • Bake for 60 minutes, or until a skewer inserted in the center comes out dry.
  • Let cool a few minutes, unmold, and cool on a rack.

Makes 1 loaf
