Ingredients
2
1/2 cups all-purpose flour
2 tsp baking powder
Pinch salt
1 cup sugar
2 eggs, lightly beaten
3/4 cup milk
1/2 cup olive oil
1/2 cup golden raisins
Grated zest of 1 lemon
1/4 cup coarsely chopped walnuts
Method
Preheat
oven to 350ºF
In
a mixing bowl, stir together the flour, baking
powder, salt and sugar. Add the eggs, milk,
and olive oil. Beat well.
Add
the raisins and lemon zest and stir to distribute
evenly.
Butter
a loaf pan. Pour the batter into the pan and
sprinkle the top with the walnuts.
Bake
for 60 minutes, or until a skewer inserted
in the center comes out dry.
Let
cool a few minutes, unmold, and cool on a
rack.
