Macadamia Nut Crisps
 

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

"Sick of chocolate biscuits? Well here is the answer. These mouth watering
biscuits are sure to tempt your taste buds, and keep you away from
chocolate . . . at least for a little while anyway!!"

Ingredients

250g (8oz) butter or margarine
1/3 cup castor sugar
60g (2oz) macadamia nuts
1 2/3 cups plain flour
1/2 cup desiccated coconut

Method
  • Cream the butter and sugar until light brown and fluffy.
  • Grind the macadamia nuts in a food processor or blender until the nuts resemble coarse breadcrumbs. Mix into the creamed butter and sugar mixture.
  • Add the flour and mix well.
  • Spoon heaped tablespoons of the mixture onto a lightly greased baking or biscuit tray. Flatten slightly with a fork and sprinkle each biscuit evenly with coconut.
  • Bake in a moderate oven 180ºC for 15 minutes or until lightly brown.
  • Allow biscuits to stand on the trays for about 5 minutes before removing to a wire rack to completely cool.
