Ingredients
1
cup whole wheat bread flour
1 cup unbleached white flour
1 tbsp baking powder
1/2 tsp salt
3 cloves garlic, minced
1/3 cup grated cheddar cheese
2 tbsp sweet butter, melted
1 egg, beaten
3/4 cup buttermilk
Method
Preheat
the oven to 375ºF.
Sift
together flours, baking powder, and salt into
a large bowl. Add garlic and cheese and combine
well.
In
a medium bowl, whisk together butter, egg,
and buttermilk. Add wet ingredients to dry
ingredients and mix, using a large rubber
spatula. When dough becomes too stiff, use
your hands and continue to mix, forming dough
into a ball.
Oil
an 8 1/2-inch round cake pan.
Press
dough into the cake pan and use a sharp knife
to make eight wedge-shaped cuts about 1/4-inch
deep. Bake until light brown, about 35 - 40
minutes. Let cool on a wire rack, then serve
in wedges.
Variation:
One
delicious way to serve this bread is to slice
each wedge horizontally, then spread the crumbly
side with a bit of sweet butter and sprinkle
with freshly grated Parmesan cheese. Broil
until golden and serve with grilled steak.
