Stove Top Rice Pudding
 

This recipe is from Chesapeake Bay Cooking which specialises in shellfish and seafood recipes as well as the famous Maryland Stuffed Ham recipes.

Ingredients

3 cups cooked white long grained rice
3 cups of whole milk (for an even creamier pudding, instead of adding all whole milk, add part half and half cream)
2/3 cup sugar
2 1/2 tablespoons butter
1/2 cup raisins (optional)
1 teaspoon cinnamon
1 tablespoon vanilla extract
Zest of 1 lemon

Method
  • Cook rice, milk, half and half, sugar, and butter in saucepan for 20 to 25 minutes, over low to medium heat.
  • Fold in lemon zest and 1/2 teaspoon of cinnamon.
  • Spoon into dessert cups or bowl and dust top of pudding evenly with remaining 1/2 teaspoon of cinnamon, and cover with plastic wrap.
  • Place in refrigerator and chill for at least 2 hours

Serves 4
