Lamb Burgers
 

Working at the BBC Good Food Show last November gave me very little opportunity to actually see much of the show. However, one interesting item I did get given was a CD-Rom of recipes, promoting New Zealand Lamb. There are some first class recipes - hopefully they will not mind me publishing a few!

How to introduce New Zealand Lamb? That is probably best left to the New Zealanders themselves:

Ingredients

500g / 1 lb New Zealand minced lamb, (thawed if frozen)
1 onion, finely or grated
2.5ml / 1/2 tsp dried mixed herbs
salt and freshly ground black pepper

Method
  • Mix the minced lamb with the onion, herbs and plenty of seasoning.
  • Divide the mixture into 4, and shape into round burgers by hand.
  • Place under a preheated grill and cook for 8 - 10 minutes each side turning once.
  • Serve in a toasted bun or with chips and a salad.

Alternative Flavours:

  • Chilli: Add 15ml / 1 tbsp sweet chilli sauce and 15ml / 1 tbsp tomato purée to raw mixture. Shape and cook as in recipe.
  • Curry: Add 15ml / 1 tbsp curry paste, 5ml / 1 tsp turmeric and 15ml / 1 tbsp mango chutney to raw mixture. Shape and cook as in recipe.
  • Country: Add 5ml / 1 tsp concentrated mint sauce (buy in a jar from any good supermarket) and 1 dessert apple, peeled and grated to raw mixture. Shape into burger, loosely wrap in two rashers streaky bacon and cook as in recipe.
