Carrot Bread
 

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

Ingredients

1 cup sugar
1/2 cup shortening
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon allspice
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
2 eggs
1 cup finely grated carrots
1/2 cup raisins

Method
  • Cream together sugar and shortening.
  • Sift together dry ingredients in a separate bowl.
  • Add dry ingredients to creamed mixture.
  • Add eggs, one at a time.
  • Add grated carrots and raisins.
  • Pour into greased and floured loaf pan (9 1/4 x 5 1/4 x 2 3/4).
  • Bake for 55 minutes at 375°F.

Makes 1 loaf (18 x 1/2 slices)
